Recipe Photo Contest!

This was a fun contest! Contestants just needed to post their own photo of a potato recipe! I had plenty of those because I love to cook different kinds of potato dishes. Well, I entered mine and it became a finalist!

I just realized that I should post the recipe for that photo, thanks to Tammy Boykin (my Facebook friend).
This recipe was created for me by my food friend named Michael Trigiano. He created this when I was looking for a unique potato recipe! This delicious masterpiece is what he came up with!

INGREDIENTS:
  • 2 lb. yukon gold potatoes, peeled and cut into thick wedges about ¾ inch thick
  • 2 Tbs. Kosher salt; more for seasoning
  • 1/2 cup extra-virgin olive oil 
  • 1/3 cup chopped kalamata olives - sliced
  • 2 cloves of garlic - crushed
  • 1 Teaspoon fresh thyme leaves stripped from stems and chopped
  • Freshly ground black pepper to taste
  • 1/4 cup chopped fresh flat-leaf parsley - chopped
  • a squeeze of fresh orange juice from 1/2 an orange
  • orange slices for garnish from the other 1/2 of the orange
DIRECTION:
  • Line a baking sheet with foil.
  • Preheat oven to 400F.
  • Heat the oil with the garlic and thyme set aside to infuse the oil with the garlic and thyme about 20 minutes.
  • In a large bowl toss all the ingredients except the parsley and kalamata olives.
  • Spread potato mixture onto sheet pan and bake until potatoes are golden brown and fork tender about 35 to 40 minutes.
  • Remove from oven add kalamata olives toss and return to oven for another two minutes just to heat through.
  • Remove from oven to a large bowl and add parsley and toss serve immediately with a squeeze of fresh orange juice.
  • Garnish with orange slices.

The Recipe Diva Contest!

This was my recipe entry...
 This was a great contest because I just had to post my recipe and members of the cooking site would vote on it...the contestant with the most votes won the grand prize. There were 4 levels of prizes and my recipe won second place, which was the prize I was hoping for! A Breville Smart Oven!!!

This is my prize! I love it!!!

  4. stopping by to say hi to you. How are you doing today? Well big daddy came home and decided it's time for him to really get the weight off. Cooking lite will be a whole new world for me. I just went on amazon and bought a couple of cookbooks that had some really good ratings that are cooking for two and lite. So I'm hoping I won't be disappointed in them. Time to change gears here. I think my biggest challenge will be the dessert dept.

  8. am trying to start my blog and haven't got a clue Lillian. Am going to go look for a website that maybe can take me through step by step to show me how to do this. I get frustrated real easy when I feel like I can't catch on to something. Pooh.

  9. I know how you feel! Thats why it took me so long to get my blog started! I couldn't figure out how to design it or how to add the stuff I wanted to add, like photos and links! Start with the design! Go to the design tab at the top right. Then go to 'customize'...then click on 'Advanced' in the upper left. Thats where you pick out your backgrounds, colors of everything for your text, links, header, footer, etc. When you have everything the way you want it to look click 'apply to blog' in the upper right! This will be a good start! Then you can start 'creating a post'! Youtube has some videos on how to do stuff on blogger. I hope this helps you! I'm new at this too and I'm still learning!

  10. thanks Lillian. Don't know if anyone can even see my blog yet or not. I'm going to go check out youtube, didn't think about that. I don't think the layout is right. Hope it's up and running by tomorrow. WIll also have to figure out how to add pics.

  11. Yes, your blog is up...I just saw it! I love lite cooking and can't wait to see your recipes! Adding pics is easy! When you're writing a new post you will see some option at the top of the page....hover your mouse over the options and you will see what each one is! Theres a picture option! When you click on that it will bring your to the 'browse' page, so you can access your computers photo file! After you upload the pic, you can add a caption too! If the caption option doesn't show up after your pic is up, then just click on the pic in your post and the caption option will show! Good luck! =)
