I'm not sure which category this fits under so I just eat it for both! This is a recipe from a cook named Michellem. I tried this and loved it! If you like french toast and you like apple pie, you'll love this! I added my photo!

Apple Pie Sandwiches
INGREDIENTS;
2 cups apples, peeled and diced
1 cup water
1/2 cup plus 1 tablespoon sugar, divided
5 teaspoons cornstarch
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons fresh lemon juice
12 slices white bread
3 large eggs
2/3 cup milk
2 teaspoons pure vanilla extract
confectioners' sugar, for dusting
DIRECTIONS;
In a saucepan, cook apples and water over medium heat for about 10 minutes or until apples are tender.
Combine 1/2 cup sugar, cornstarch, cinnamon and nutmeg. Stir into the apple mixture. Bring to a boil, cook and stir for 2 minutes or until thickened. Remove from heat. Stir in lemon juice.
Spread six slices of bread with 1/3 cup filling each. Top with remaining bread.
In a shallow bowl, beat the eggs, milk, vanilla and remaining sugar. Dip sandwiches in egg mixture.
Cook on a lightly greased hot griddle until golden brown on both sides.
Dust with confectioners sugar if desired or smother with maple syrup! Even top it with some ice-cream!

DeleteThis looks rather tricky to get the sandwiches dipped in the egg mixture and into the pan without the whole thing falling apart. Sure looks good though.
ReplyDeleteIt really wasn't that bad! Your hands will be full of egg because you can't do it without using your hands! But a quick hand rinse while its frying and your done!Maybe use a large griddle so you can fit 3-6 at a time! But even doing it one at a time goes quick because they brown fairly easily! =)
