I first saw this recipe on Pinterest. It was re-pinned from this blog called 'Paul, Kelsey & Levi'.
This recipe sounded so refreshing and unique! I love salsa and I love cucumbers, so this was a win, win situation for me! I made it and loved it! The salsa was crunchy and tangy, but also very light and fresh! I had to add more salt than stated in the recipe. And I didn't have any fresh parsley or cilantro but everything else was as written. This is very similar to a 'Pico de Gallo' recipe.
I served it with homemade wheat tortilla chips...well, I didn't actually make the tortilla chips from scratch (although I will try that someday) I just cut up store bought flour tortillas and baked them in the oven until golden brown.
Hubby gave this a thumbs up, so I'll definitely be making it again.
