I have many pork 'chop' recipes but not many pork 'roast' recipes! I don't think I'll ever need to look for another pork roast recipe after trying this one because it was the best pork roast I've ever tasted! And I love how easy it was to make! Only 6 ingredients in this perfectly delicious recipe! Just mix together the simple spice ingredients, then rub it all over the pork loin and bake for 40-45 minutes.

One Pot Mexican Chicken and Rice

This is a recipe I created for my assignment with the Allrecipes Allstar Program. This month one of our sponsors is Herdez. This sponsor generously sent all the Allstars this delicious package of their cooking sauces! Also included in the box was a microwave tortilla warmer! I can't wait to use that convenient kitchen gadget!


For this assignment we were asked to create a recipe using Herdez's new cooking sauces. I love Mexican food so this was such an easy task for me! I knew I wanted to make a hearty, stick to your ribs kind of meal! I think I achieved that in this 'one pot' recipe! My family loved my creation and I loved how easy it was to make! The chicken and rice cook together is the same pot! No need to pre-cook the rice! Less pots and pans to wash always makes me happy! I love to cook but I hate to do dishes! I'll be making a few more recipes using Herdez cooking sauces! The flavors are so fresh and bold, but not overly spicy!
 
One Pot Mexican Chicken and Rice
One Pot Mexican Chicken and Rice

        3 boneless skinless chicken breasts, thinly sliced into bite sized pieces
                   1 1/2 cups uncooked long grain white rice
                   2 large cloves garlic, minced
                   1 medium sized onion, chopped
                   2 Tbls. olive oil
                   1 Tbls. butter
                   1 tsp. kosher salt
                   1/4 tsp. black pepper
                   2 tsp. chili powder
                   2 tsp. ground cumin
                   12 oz. jar Herdez® Tomatillo Verde Cooking Sauce
                   14.5 oz. can low sodium chicken broth
                   2 cups shredded cheddar cheese
                   1/2 cup sour cream
                   1/4 cup fresh chopped parsley or cilantro
 
Directions
In a small bowl mix together salt, pepper, chili powder and cumin. Sprinkle this mixture over the sliced chicken breasts and toss to coat.
In a very large skillet, melt butter with olive oil over medium heat. Add seasoned chicken pieces along with minced garlic and chopped onion. Saute while stirring until chicken is fairly browned and onions are tender, about 5-10 minutes. Then reduce heat to medium/low.
Add the uncooked rice to the chicken mixture and stir well. Cook for about 1-2 minutes. Then add the Herdez cooking sauce and the chicken broth. Stir well again and bring to a simmer. Then reduce heat to low, cover skillet and let simmer for 20 minutes.
                   Then uncover and sprinkle with shredded cheddar cheese. Top with sour cream and parsley or cilantro before serving.
Serve warm.   Serves 4

A Crab Delight!

I was asked to make this recipe as one of my tasks for the Allrecipes.com Brand Ambassador Program. I knew I would love it because I love all things crab! This tasted like a really good crab cake! And I love the crunchy fresh breadcrumb/butter topping! This was very easy to make and is perfect as an appetizer! Here is the link to the recipe, along with my photo! I only made 2 changes to the recipe. I used imitation crab meat ( gasp! I know that's so wrong but I needed to use it or toss it) and I accidently used the fresh breadcrumbs IN the crab mixture AND on top of the mixture! It turned out to be a delicious mistake, so I'll make it like that from now on!

A Slow Cooker Kind of Day!

Yes, its just another one of those days! Plus, I can use it to get more points in the Allstar program! This month the Allstar members were encouraged to try at least 3 slow cooker recipes from the Allrecipes.com site! We get one point for every recipe we make (up to 3 points)...these points go towards chances to win a prize at the end of each month.

So, today I'm planning on making a cassoulet...isn't that just a fancy way of saying casserole!  The 'cassoulet' has chicken and kielbasa in it! Along with beans, onions and some other tasty ingredients! It sounded unique, so I thought I would try it because I just LOVE unique recipes! If its a winner, I'll post it here later...with pics!

The cassoulet tonight, needed a super tweak! I tasted it before I served it and it was very bland! So I decided to fix it by adding some liquid smoke, chicken broth, shredded cheddar cheese and cream cheese. This gave it some creamy texture and a perfect smokey, cheesy flavor! Here is my photo and the link to my version of the recipe!

Here's a little kitchen tip that I'd like to share! I've been doing this for many years and it's so helpful! I used to have such a problem with where to put my recipe while I'm cooking...no matter where I would put it, it would always be in the way! So I finally came up with a solution! I  glued a magnet on the underside of one of my top kitchen cabinets. This is just a piece of a refrigerator magnet. You know the kind that local businesses give away as advertisement! I cut it into a strip and just glued it under the front edge of my upper cabinet.

    Then I cut another same size strip to use as the holder for the recipe. So when I want to keep my recipe at easy sight, I just put it between the two magnets and its right there for me to see, without being in my way! The recipe stays off my counter top and out of my way, but not out of my sight!
