Zucchini Alfredo

Zucchini Alfredo

I just love this recipe for so many reasons! It's low fat, creamy, healthy, easy and my kids eat it because they don't realize that there is zucchini in it! This recipe is shredded zucchini in a creamy parmesan/basil sauce!

Apple and Feta Pan Fried Pizzas

Apple and Feta Pan Fried Pizzas

Eating healthy is part of my assignment this month in the Allrecipes Allstar Brand Ambassador Program. The ambassadors were asked to choose recipes from the My Plate healthy eating recipe collection. That's exactly where I found this pizza recipe! There are so many other recipes to choose from but this one stood out to me because of the combination of ingredients! It sounded so unique and flavorful! And that's exactly what is was! Plus I never thought to pan fry pizza dough! I think I'll be doing that more often!

Super Easy Asian Yellow Rice

Super Easy Asian Yellow Rice

Going out to eat at Chinese restaurants is one of my favorite things to do! I know I can always find something delicious on the menu! When I can't go out, I love to try those same menu items at home.

Baked Eggplant and Tomato Stacks

Baked Eggplant and Tomato Stacks

I decided to give this a try because I had an extra eggplant leftover from a previous recipe. This reminds me of a lighter and fresher version of eggplant parmesan. Much quicker to make and a whole lot healthier because it doesn't contain breadcrumbs and tons of cheese.

Orzo Veggie Bake

Orzo Veggie Bake

I've been eating way too much meat lately, so I started hunting for recipes that only contained vegetables. Well, in this case, vegetables and pasta. I knew that I also wanted an easy recipe. This was all of those things! I love that I didn't need to pre-cook the pasta. I was able to make this main dish using only a large oven safe nonstick skillet and a baking sheet to roast the veggies.

Alfredo...yum!

Doesn't this look like a big bowl of creamy pasta goodness?

Well it sort of is...except it's not pasta!

I've seen this recipe and similar recipes like this one, floating around the Internet for quite a while now! It has been on just about every food page I've visited. I took it as a sign that I need to try it...and so I did!

Caprese Stuffed Tomatoes

With the warm summer days approaching I'm always looking for new cold dishes to prepare! I love fresh tomato recipes, especially when garlic and mozzarella are involved!

One Pan Mexican Potato Casserole

One Pan Mexican Potato Casserole

I'm so thrilled at how delicious this potato side dish turned out! Besides the huge flavors...this was so easy and quick to make! I'm loving 'One Pot Wonders' these days because it's been a busy month so far...not much time for fancy cooking or difficult recipes! Everything is mixed together in one casserole dish, then you just pop it in the oven! Stir one time during baking...add the sauce and cheese...stir and continue baking until cheese melts! Done baking in 35 minutes!

Tomato Mozzarella Toast!

I'm just totally loving simple and easy recipes lately! I'm finding that recipes don't need to have a long list of ingredients to be flavorful! As with this recipe from the 'Riches to Rags by Dori' blog.

This is my version of her recipe. I made this using white
Tomato Mozzarella Toasttoast sprinkled with shredded mozzarella cheese topped with chopped fresh basil, sliced plum tomatoes, minced fresh garlic and a pinch of salt. Then I put it in the toaster oven to melt the cheese and it was done. A very light but VERY flavorful fresh tasting open face sandwich!

I loved every last bite of this! Give it a try!

Portobella Burgers with Roasted Red Pepper Paste and Smoked Mozzarella

Portobella Burgers with Roasted Red Pepper Paste and Smoked Mozzarella
I found this recipe on GroupRecipes.com. This is a Rachel Ray recipe. I never had a portobella burger until I tried this one. How did I live without this delicious recipe for most of my life? I've made this recipe about 20 times since then.
